Peanut Slaw

I have had crunchy purple cabbage mixed with easy peanut sauce and crunchy peanuts on my mind since December. In other words – a killer peanut slaw! In notes on my phone, I have one note named “To Make”, so peanut slaw along with peanut sauce been sitting there forever. Thai Cauliflower Rice

This Thai cauliflower rice after past weekend that has been an absolute nightmare – we spent 46 hours without power due to a windstorm. See, there is always a payback for a super fun weekend before. Bok Choy Noodle Bowl with Tofu

This bok choy noodle bowl started out as an idea I got from the latest Cooking Light issue on a flight back home from vacation last week. I turned this light side dish into a main meal – salad/bowl that is vegan and gluten free. I thought it was simply genius to shred the bok choy into pieces. At the end of the day it’s Chinese cabbage, so why not?! Baby bok choy or large bok choy work.
