After falling in love with the cottage cheese toast, I knew I had to turn into a cottage cheese grilled cheese. I am in a stage of life when healthy dinner has to be done even faster than before because there are so many other fun things to do in life!

Here is why I think you’ll love it too:

  • Delicious: Crispy, golden bread with a gooey, cheesy center, but with a smart upgrade.

Ingredients for Cottage Cheese Grilled Cheese

Protein bread, cottage cheese, mozzarella cheese, parmesan cheese, butter, everything bagel seasoning.
  • Bread: I like to use protein bread for more protein, it often has some additives though but is affordable. If in your budget, another good option is Ezekiel sprouted bread. If you have time, make my Greek yogurt bread or cottage cheese bread. And in a pinch, whole wheat bread or sourdough are healthy options.
  • Cottage cheese: You can use non-fat cottage cheese or full-fat cottage cheese. I usually use 2%. Make sure it’s thick and not watery. Drain, if needed.
  • Butter: I do prefer salted butter because it’s more flavorful.
  • Mozzarella cheese: I recommend to shred or grate cheese yourself because it will melt better. And since cook time is short, it’s an important aspect of this cottage cheese grilled cheese recipe.
  • Parmesan cheese: I always advocate to buy a large hunk of Parmigiano Reggiano and grate it yourself as it has more flavor as it has been aged, and melts better.
  • Seasoning: My favorite is everything bagel seasoning because it adds a lot of flavor in one shot.

How to Make Cottage Cheese Grilled Cheese

Step by step process how to make cottage cheese grilled cheese.
  1. Make the filling: In a medium bowl, combine cottage cheese, half of mozzarella, Parmesan, and the seasoning. Stir well.
  2. Butter the bread: Spread butter on one side of all of 4 bread slices. Also preheat large non-stick skillet or cast iron skillet on medium heat.
  3. Assemble: Place 2 slices of bread buttered side down on a skillet, top with cottage cheese mixture and remaining mozzarella, dividing evenly. Place another piece of bread on top of each, buttered side up.
  4. Cook: Pan fry for 3-5 minutes, flip and cook for another 4-5 minutes.

Tips for Best Results

  • Use thick cottage cheese: Some brands are watery, especially in Canada where I live. Feel free to drain it a bit.
  • To air fry it: We have tested this cottage cheese grilled cheese in air fryer and it works. We still prefer the skillet method, but if you want to try, assemble and air fry at 400F for 8-10 minutes. I would add a bit of cheddar for flavor and maybe use toothpicks to hold it all together.
  • To make a large batch: Use the x2 or x3 multiplier button in the recipe card below and cook all at once on a griddle.
  • Keep an eye on it when cooking: Watch it not to burn. It can go from golden brown to burnt fast. It all depends on your skillet and stove.

Variations

Here are a few ideas for additional ingredients but be mindful not to overload your sandwich, so it doesn’t become soggy.

  • More protein: You can always mix in a bit of canned tuna, cubed chicken or sliced pepperoni in a mixture.
  • Veggies: Add cut in half cherry tomatoes or sauteed spinach or kale to the mixture.
  • More flavor: A bit of chopped olives or sun-dried tomatoes mixed with fresh herbs like basil or oregano would be “wow”. Or even a dollop of marinara sauce.
  • Other seasonings: Garlic powder, onion powder, Italian seasoning or red pepper flakes for some heat. Have fun with it!

How to Reheat

A word of caution is it’s best to consume grilled cheese with cottage cheese immediately as it gets soggy.

However, if you end up with leftovers and would like to reheat them, pan fry on low heat in a buttered skillet, flipping halfway through and until filling is creamy and cheesy.

Ingredients

  • In a medium bowl, add cottage cheese, half the mozzarella cheese, Parmesan cheese, and everything bagel seasoning. Stir well to combine.
  • Butter the bread slices on one side with softened butter.
  • Heat a large non-stick skillet or cast iron skillet over medium-high heat. Place the buttered side of the bread into the skillet, then spread over the cottage cheese mixture and add some mozzarella cheese on top.
  • Close the sandwich with the second piece of bread, facing buttered side up. Cook the sandwich in a skillet until nicely golden browned, for 3 minutes per side.
  • Serve hot as desired.
