I am on a cauliflower kick this week. Thai cauliflower rice, cauliflower biscuits…I just want to clarify something – I’m fully aware that these are not real biscuits. This Thai cauliflower rice after past weekend that has been an absolute nightmare – we spent 46 hours without power due to a windstorm. See, there is always a payback for a super fun weekend before. Zucchini and Potato Bake

Combining anything dairy or mayo with garlic, dill, salt and pepper is so popular in Ukrainian cooking. My grandma often baked potatoes with sour cream, dill and garlic. Kind of a version of American scalloped potatoes with exception they were coarsely chopped instead of thinly sliced. I think I know why. A few months ago I made scalloped potatoes and slicing them took me good 30 minutes, I swear. I’m definitely more of a chop and mix everything together girl.

10 minute Clean Eating side dish easy enough for a weeknight dinner. This recipe serves 4 people and because it was so amazing we had no leftovers. Kids loved it! Baked Cauliflower Parmesan Steaks with Wild Rice Salad

If you are running out of ideas how to cook cauliflower, here is a new fun way in a form of steaks. Plus they are crunchy, pretty and delicious. My kids loved these and even ate the salad. Overall, easy and clean meatless dinner. I baked cauliflower directly on a well oiled baking sheet for that nice crispy outside.
