These raw carrot cake energy balls have everything our healthy carrot cake does and more. Carrots, raisins, almond butter, and oats.
The result is a snack or dessert you can enjoy any time guilt-free. And so easy to make! That chocolate drizzle truly seals the deal.
All you need is a handful of inexpensive pantry ingredients, one bowl, and 30 minutes of your time.
The Ingredients
Unlike many carrot cake truffle recipes, this recipe consists of whole foods and raw, natural ingredients. Most of which are probably already in your pantry!
- Almond butter: This will bind the carrot cake energy balls and provide protein. I used creamy raw almond butter.
- Carrots: I recommend freshly grated rather than a grocery store pre-prepared pack.
- Oats: Use rolled oats for more texture and chew or quick oats for a less noticeable texture.
- Coconut: Use unsweetened shredded coconut. Alternatively, crushed nuts or seeds could work.
- Raisins: For bursts of sweetness. Alternatively, use finely chopped dates, sultanas, or dried pineapple.
- Sweetener: Use a liquid sweetener like honey or maple syrup. You could also use a sugar-free syrup.
- Spices: These raw carrot cake bites rely on classic carrot cake spices, including cinnamon and nutmeg. Plus salt.
- Chocolate chips: I use dark chocolate, but this ingredient is technically optional. Use sugar-free chocolate if preferred.
What Else Could I Add?
- Other spices: Add a pinch of ground ginger or cloves for extra warmth.
- Vanilla: A small amount of vanilla would taste fantastic in these carrot cake balls.
- Crushed nuts or seeds: Small amount of nuts like walnuts or pecans or seeds like pumpkin seeds or sunflower seeds. These will boost protein levels, healthy fats, omegas, and vitamins and minerals.
- Hemp hearts: For more protein, essential fatty acids, and various nutrients. Whole flaxseed or chia seeds would also work.
- Citrus zest: A small amount of orange or lemon zest will add depth to the bliss balls.
How to Make Carrot Cake Truffles
All you need to prepare this easy, healthy carrot cake truffle recipe is a handful of ingredients, one bowl, and a spatula. No food processor. No oven.
First, wash, peel, and grate the carrots using the medium holes on a box grater. Then, combine all the ingredients except the chocolate chips into a medium bowl. Use a spatula to mix it into a thick, doughy consistency.
Use a food processor if you prefer, but I prefer to save on washing up. In fact, I rely on a bowl and spoon whenever possible for my snack recipes, like these healthy chocolate coconutย balls and healthy rum balls.
Using a small scoop, form and roll golf ball sized carrot cake balls and place them on a parchment lined tray. Then transfer the tray to the freezer for 30 minutes.
They are now ready to enjoy unless you want to add a melted chocolate topping.
How Do You Drizzle Chocolate on Energy Balls?
Melt the chocolate chips with a drop of coconut oil (around 1/2 teaspoon) in a microwave. Alternatively, use a double boiler method by placing a heatproof bowl over a small saucepan filled with an inch or two of simmering water. This method reduces the risk of scorching the chocolate.
Once melted, use the spoon to drizzle chocolate over each bite. They don’t have to be too clean and pretty.
Optionally, sprinkle each with either himalayan pink salt or some of the fine walnut powder at the bottom of the nut jar. There’s no need to chop them specially.

Absolutely. You’ll need more chocolate. Use a fork or press each truffle into a skewer while dipping them in the chocolate. Then, transfer them to a parchment lined tray and leave them to set.
While these carrot cake energy balls contain the flavors of carrot cake, such as carrot, raisins, spices, etc., they aren’t actually cake. So, no.
However, feel free to dip them in chocolate and serve them on a stick, similar to cake pops. ย
You can store bites in an airtight container in the freezer for up to three months.
I treat these carrot cake bites much like any of my other energy and protein balls.
They make an excellent addition to breakfast alongside a smoothie, in your lunchbox, as a pre or post workout snack. Or after dinner to satisfy your sweet tooth and keep sugar cravings at bay.
I recommend eating only one or two as a portion, preferably alongside some fruit, like an apple, for a more complete snack.
How to Store
Storing: These carrot cake bliss balls are designed to be stored in the freezer. Whenever you want one, allow it to thaw at room temperature for five minutes, then enjoy. You can store them in an airtight container for up to 3 months.
If you wanted to store them in the fridge, they’d be very soft, so they would be best individually wrapped, for up to 7 days.

Ingredients
- 1/2 cup almond butter
- 1 cup shredded carrots
- 1/4 cup rolled or quick oats
- 1/4 cup coconut flakes unsweetened
- 1/4 cup raisins
- 1 tbsp maple syrup or honey
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of salt
- 2-3 tbsp dark chocolate chips
Instructions
- In a medium bowl, add all ingredients (except chocolate chips) and using spatula mix until combined.
- Using small scoop, form and roll golf size carrot cake balls placing on a platter lined with parchment paper. Freeze for 30 minutes.
- You can enjoy carrot cake bites โas isโ straight from the freezer or turn them into healthy truffles. Melt a few tablespoons of chocolate chips with a tiny drop of coconut oil in a microwave or over a double boiler, then drizzle over each bite and sprinkle with himalayan pink salt and โpowderโ from walnuts for a sure โwowโ factor. Thaw for about 5 minutes or so before serving.
