These Greek yogurt dinner rolls will become your new favorite side dish!

While making 2 ingredient rolls was tempting, similar to how I make my Greek yogurt biscuits and Greek yogurt naan, I knew from my previous experience making Greek yogurt bread that a splash of milk is a must for those fluffy dinner rolls we all know and love.

I think these Greek yogurt rolls are better than others on the internet because the balance of yogurt and milk creates the perfect rise without yeast, and gives you that tender, bakery-style texture.

I do have a no yeast dinner rolls recipe but wanted a tad more protein. With Greek yogurt being all the rage, these rolls pack 6 grams of protein each!

Ingredients for Greek Yogurt Dinner Rolls

Greek yogurt, milk, egg, self-rising flour, cooking spray.
  • Greek yogurt: Adds moisture and is high in protein. I used 2% plain, but 0% or 4% works, just adjust flour as needed.
  • Milk: You can use any milk, but dairy milk adds even more protein.
  • Self-rising flour: Simply all-purpose flour with baking powder and salt already mixed in. It helps the dough rise on its own.
  • Egg: Used for an egg wash made with the yolk and a bit of cold water. It gives the rolls a beautiful golden color and slight sheen when baked.
  • Cooking spray: I use Misto.

Variations

Customize your self rising flour dinner rolls and make them your own!

  • Homemade self-rising flour: For every 1 cup of self-rising flour, combine 1 cup all-purpose flour with 1 1/2 teaspoons baking powder and 1/4 teaspoon salt.
  • Whole wheat flour: You can use white whole wheat flour 1:1 ratio. I have not tried to use only whole wheat flour but if I were, I would start with 2 1/3 cups.
  • Gluten-free flour: Substitute Bob’s Red Mill 1:1 gluten-free baking blend. You may need to slightly adjust the liquid because gluten-free flours can absorb more moisture.
  • Make in air fryer: Preheat your air fryer to 320 F and bake for 10-14 minutes. Don’t worry if the rolls touch, they’ll turn out just like traditional dinner rolls!
  • Dairy-free: Use thick plant-based Greek yogurt and a non-dairy milk for the liquid.

How to Make Greek Yogurt Dinner Rolls

This Greek yogurt dinner rolls recipe does not require any kneading or rest!

Step by step process how to make Greek yogurt dinner rolls.

Preheat oven to 375 F and lightly spray your baking dish.

  1. Mix wet ingredients: In a large bowl, whisk together Greek yogurt and milk until smooth.
  2. Make the dough: Add the flour and stir with a spatula, then use your hands to form a dough ball. It should be soft but not sticky, you may need to add a little more flour.
  3. Shape the rolls: Sprinkle your countertop with flour, then shape the dough into a log or round. Cut the log into 12 pieces, roll each into a ball and place them in the baking dish in 3 rows of 4.
  4. Make the egg wash: Whisk the egg yolk with 1 tablespoon cold water and brush over the tops.
  5. Bake: Pop them in the oven for 30-33 minutes, until lightly golden brown.

Tips for Best Results

  • Don’t use regular yogurt: It has more whey, so you’ll need extra flour. I haven’t tested it, so please stick to Greek yogurt for reliable results.
  • Measure flour correctly: Spoon the flour into your measuring cup and level it off with a knife. Don’t scoop with measuring cup directly from the bag, or you’ll end up with too much.
  • Dough should be soft: It should feel puffy and pillowy fluffy.
  • Adjust dough consistency: Greek yogurt and flour measurements can vary by brand and method, so follow the recipe and adjust as needed. The dough should be soft, not sticky or dry.

How to Store and Make Ahead

Store: Keep your rolls in an airtight container at room temperature for 3-4 days.

Freeze: Place them in a Ziploc bag and freeze for up to 3 months. Thaw on the counter for a few hours, or warm up quickly in the microwave or toaster.

Make ahead: Refrigerate the dough for up to 24 hours, then bake as directed. Don’t store longer, or it may dry out and not rise properly.

  • Preheat oven to 375 degrees F and spray bottom and sides of baking dish with cooking spray. Set aside.
  • In a large bowl, add Greek yogurt and milk, whisk until well mixed.
  • Add flour and stir with spatula to combine, then proceed to mix with your hands until a ball of dough forms. Dough should be not sticky but not dry. Add more flour, if necessary.
  • Place dough onto a floured countertop, shape into a log or round and divide into 12 even pieces. Flour your hands as needed, roll each piece into a ball and place into previously prepared baking dish in 3 rows of 4.
  • In a small bowl, wadd egg yolk and 1 tablespoon of cold water. Whisk with a fork, then brush on top of rolls.
  • Bake for 30-33 minutes or until just slightly golden. Serve hot.
