        1. Hi Berni. It probably has some nutrients which you can discover upon quick search. I’m not too sure which ones. It is necessary for proper consistency mousse otherwise it will not be thick.

    1. For recipe accuracy. Because all different cottage cheese brands have different amount of liquid with curds, they all vary in consistency. You are welcome to wing it, might be watery might be not.
