Now, this date snickers recipe turned out so good! Chocolatey, sweet, a little salty, perfectly crunchy, and basically taste like a healthy snickers candy bar. Only 5 ingredients, all wholesome – you can’t go wrong. Perfect for summer as a no bake dessert or even a snack.
If you really love crunch, like me, I think next time I will load them with extra crunchy peanuts and maybe try pitted dates so they are more chewy.
Ingredients for Date Snickers
Just dates, peanut butter, chocolate, and a sprinkle of wholesome garnishes.
- Dates: Make sure to use Medjool dates as they are large, meaty, and can be stuffed. You can use other dates, but they are hard to stuff.
- Peanut butter: I used crunchy because I love the extra texture, but feel free to use smooth peanut butter. You can also swap in any nut or seed butter.
- Dark chocolate: A 3.5 ounce bar of 70% dark chocolate melted beautifully without needing any coconut oil. Chocolate chips would work just as well. If you’re using 75% or darker chocolate, see my tips below for smoother melting.
- Peanuts: Roasted unsalted peanuts make snickers dates taste like the real thing. I love the classic combo, but you can totally mix it up with chopped almonds, cashews, pecans, or walnuts.
- Flaky sea salt: Not everyone adds sea salt as a garnish. I preferred peanuts but you can try both and see.
How to Make Date Snickers

Line large baking sheet with parchment paper and set a wire rack on top.
- Prep the dates: Use a paring knife, carefully slice down the middle of each date, but don’t cut all the way through. Remove the pit.
- Fill them up: Pipe in the peanut butter with a bag, or use a teaspoon and wipe it along the inside edge of the cut.
- Coat the dates: Add the chocolate to a microwave-safe bowl and heat in 30 second bursts until it’s melted. Then, use a fork or toothpick to dip each stuffed date in the chocolate, cover it completely, and set it on a wire rack. Keep going until all the dates are coated.
- Set and chill: Let the dates sit on the rack for 5 minutes, then move them to the parchment lined baking sheet. Sprinkle with flaky sea salt and chopped peanuts, then chill in the fridge for about an hour until the chocolate is fully set.
Tips for Best Results
- Use unpitted dates: Choose the dates with pits, instead of those without. The dates with pits have better texture, are less chewy, and have better flavor in general.
- If your peanut butter is thick: You know after using it for a while, halfway through the jar or more towards the bottom it gets harder to scoop. Just microwave it for a few seconds and give it a stir to make it nice and runny again.
- Chill before adding salt: I suggest placing date snickers in the fridge for a few minutes before sprinkling them with sea salt flakes. If the chocolate is too runny, the sea salt flakes will sink into the chocolate.
- More than 70% chocolate: If you are using 75% and above dark chocolate, make sure to add 1-2 teaspoons of the coconut oil into the chocolate.
- For more crunch and chew: Fill dates with crunchy peanut butter, add extra chopped peanuts on top, and try using pitted dates for a slightly chewier bite.

- Nut butter: Use almond butter, cashew butter, sunflower seed butter, or even tahini or pistachio cream for a twist on the classic peanut butter flavor.
- Extra crunch: Mix chopped nuts right into the peanut butter before stuffing, or sprinkle some inside the date before dipping in chocolate.
- A touch of coconut: Add shredded coconut inside the date or sprinkle on top of the chocolate before it sets.
- Add some spice: Stir a pinch of cinnamon, espresso powder, or pumpkin spice into the melted chocolate.

- 14 large Medjool dates, with pit
- 1/3 cup crunchy or smooth peanut butter, runny
- 3.5 ounces 70% dark chocolate bar, chopped
- Sea salt flakes, for garnish
- Dry roasted peanuts, chopped, for garnish
Instructions
- Line large baking sheet with parchment paper and place wire rack on top. Set aside.
- Place the Medjool dates on a cutting board. Using a paring knife, slice down the middle but not all the way through and remove the pit.
- Stuff each date with about 1 teaspoon of peanut butter.
- In a medium microwave-safe bowl, add the chocolate and melt in a microwave in 30 second intervals, stirring in-between.
- Using a fork, dip each stuffed date into a bowl with melted chocolate, coat completely, remove and place on a previously prepared wire rack. Repeat with remaining dates.
- Let the date snickers sit on a wire rack for 5 minutes, then transfer them to a fridge for another 5 minutes to let chocolate set a bit to avoid sea salt melting.
- Remove dates from a wire rack and place directly on the same baking sheet. Sprinkle with sea salt flakes and chopped peanuts.
- Refrigerate for 1 hour or until the chocolate is nicely set. Enjoy!
