It’s an older recipe of mine that I have retested and updated. I love to cook this way because you literally just throw ground turkey and potatoes with simple seasonings in a skillet, add a chock full of veggies like broccoli or broccolini and call it a day!

Ingredients for Ground Turkey and Potatoes
All you need is 9 simple ingredients, plus oil, salt and pepper.

- Ground turkey: I use lean ground turkey, but you can also go for ground chicken or even ground beef.
- Potatoes: Yukon Gold potatoes or baby potatoes are the best choice if you want them to hold shape. But there is nothing wrong with starchy stew-like consistency that russet potatoes create.
- Broccoli: Easy to buy pre-chopped. I also love slightly sweet flavor of broccolini, just cut it down into small pieces.
- Aromatics: A combination of garlic and onion for a lot of added flavor.
- Chicken broth: To cook potatoes in to add flavor, can also use vegetable broth.
- Lemon juice: Use freshly squeezed lemon juice.
- Soy sauce: To add an umami flavor. For a gluten free option, use tamari, liquid aminos or coconut aminos.
- Oil: Use any cooking oil such as avocado oil or olive oil.
- Salt and pepper: Season to taste.
- Green onion: Alternatively, any fresh herbs like parsley, cilantro or chives would work well.
Variations
- Beans: Kidney beans or white beans will add extra fiber and protein.
- Add heat: Either add a pinch of red pepper flakes or some hot sauce over cooked ground turkey and potatoes.
- Other vegetables: Swap out the broccoli for green beans or asparagus. You could also further boost the meal by adding spinach or kale, peas, bell pepper, or cauliflower rice.
- Alternative spices: These ingredients would pair well with cumin, taco seasoning, or curry powder.
- Cheese: Add some shredded mozzarella, cheddar or pepper jack when serving.
How to Make Ground Turkey and Potato Skillet

- Preheat large Dutch oven or heavy bottomed stainless steel pan over medium-high heat and add a tablespoon of oil. Once hot, add 5 of the cloves of garlic and broccoli. Cook for 4-5 minutes, stirring every 45 seconds. When ready, they should be lightly browned on all sides.
- Then add the lemon juice, salt and pepper, transfer everything to a medium bowl, and set aside.
- Add another tablespoon of oil to the pan with the remaining 2 garlic cloves and sauté for 2 minutes, stirring frequently.
- Then add the ground turkey, cooking it for 5 minutes, using your spatula to break it into small pieces.
- Add the soy sauce, potatoes, and chicken broth and stir gently. Bring to a boil, cover with a lid, then reduce the heat to medium low and simmer for 20 minutes, or until the potatoes are tender.
- Mix in the previously cooked broccoli and the finely chopped green onion, and serve!
Tips for Best Results
- If using sweet potatoes: Ensure you cut it into 1/2-inch pieces to cook within the timeframe. It may still take slightly longer.
- Cooking time may vary: Based on how large the pieces of potato are and size of your pan.
- Don’t overcook the broccoli: Remove them from the pan while they are still quite firm. When we add them at the end and mix with potatoes, residual heat will soften them even more.

How to Store
Store: Allow ground turkey and potatoes to cool and then store it in an airtight container in the refrigerator for 3 days.
Freeze? I don’t recommend to freeze this dish because potatoes do not thaw well. But you may try, if you wish. I know some people do not mind the taste and texture of previously cooked and frozen potatoes.

- 4 cups broccoli crowns, coarsely chopped
- 7 large garlic cloves, thinly sliced & divided
- 1/3 lemon, juice of
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 medium onion, finely chopped
- 1 pound ground turkey, lean
- 2 pounds baby potatoes, 4-5 cups, cut into even sizes
- 1 cup chicken broth, low sodium
- 3 tablespoons soy sauce, I used Bragg liquid aminos
- 2 green onion sprigs, finely chopped
- 2 tablespoons avocado or coconut oil, divided
Instructions
- Preheat dutch oven or large deep skillet on medium-high heat. Add 1 tablespoon of oil, 5 garlic cloves and broccoli. Cook for 4 – 5 minutes or until garlic and broccoli get some char on each side, stir occasionally.
- Drizzle with lemon juice and sprinkle with salt and pepper. Stir, transfer to a medium bowl and set aside.
- Return dutch oven to medium heat and add remaining 1 tablespoon of oil. Add remaining 2 garlic cloves and onion; sauté for 2 minutes, stirring frequently. Add ground turkey and cook for 5 more minutes, stirring and breaking into pieces.
- Add potatoes, chicken broth and soy sauce; stir gently to combine. Bring to a boil, cover and cook on low-medium heat for 20 minutes. Check potatoes for readiness and if necessary cook a bit longer.
- Add previously cooked broccoli and green onion. Stir gently and serve hot.
Notes
- Store: Refrigerate in an airtight container for up to 5 days. Reheat by simmering on low heat in the pot on the stove or in a microwave.
- Freeze: I do not like freezing potatoes but if you want, freeze in an airtight container for up to 3 months. Thaw in the fridge overnight.

Hi Amber. Thank you!:) Yes, you can. Just make sure to cut sweet potatoes in large cubes and you might have to cook them for less than 20 minutes like the recipe tells you to cook white potatoes. Check after 15 mins. .:)

I hate clutter too. My cupboards and drawers used to be 100% organized. Now, maybe 70% is and the rest is hiding. I used to do spring cleaning way more. Things like that. I ignore, do less often or hire people. 3 kids…I have no idea how you can manage. Your kids are older now, so that’s easier…in a way. Is it ever easy though?!:)
Ignore the mess indeed! The best thing I ever did for myself as a parent was to get some cleaners in every two weeks. Now I truly ignore the mess a lot more, knowing that someone will be in to clean soon. And like you, we don’t have family in the area at all so it’s just me and my husband! We need all the help we can get.
