Penne with Kalamata Olives, Garlic Roasted Tomatoes and Goat Cheese

Quick 30 minute pasta dinner that I made with a lot of Kalamata olives from a giant jar from Costco, farmer’s market tomatoes and organic soft goat cheese that had to be used up ASAP (leftover from making this salad). Shrimp Orzo Salad

The story behind this shrimp orzo salad is that we ended up in front of a shrimp freezer in Fred Meyer and “3” kids kept chirping in my ear how wonderful it would be to enjoy cold shrimp at the beach. Healthy Mushroom Stroganoff

This healthy mushroom stroganoff is a great replacement for traditional Russian beef stroganoff. Made with brown mushrooms, Greek yogurt and brown rice pasta (my favourite for this recipe), this vegetable stroganoff is hearty and healthier than traditional heavy cream version. Black Bean Spaghetti with Garlic Shrimp Recipe

Have you ever heard of black bean spaghetti? I first discovered black bean pasta at Costco a year ago. Organic and gluten free, they contain 25 g of protein and 12 g of fiber per serving. Another lighter alternative to pasta besides zucchini noodles. The taste is very good, the texture is light and cooking time is 7 minutes. The texture and taste is of course different from wheat pasta but very satisfying. Nothing weird like those tofu shirataki noodles.

Turkey Meatball Soup

Healthy Pasta with Pesto, Tomato and Broccoli

Organic pasta mixed with blistered grape tomatoes, broccoli, sun dried tomatoes, all natural pesto and topped with freshly grated Parmesan cheese. Total time = 30 minutes, including the prep and clean up. This was delicious and healthy pasta! A few years ago, my kids couldn’t stand pesto. So, I stopped buying it and never made one. Actually, I went through a stage thinking it’s too fattening but these days I just know that moderation is key.

Chicken Noodle Vegetable Soup

This chicken noodle vegetable soup is easy, budget-friendly and my boys couldn’t get enough of it.
