Pasta with Cauliflower and Pumpkin Seeds

Today I cooked like Alex. Whenever he has to cook (please note has, Alex doesn’t love to cook) all his meals are made in a pot or a skillet with onions and garlic. All of them, and now my lentil casserole as well. And they are type of a stir fry. It is a typical Russian way of cooking. I remember my grandma’s hands always smelled like onions. In fact, I am typing with onion fingers right now. And even watermelon tasting like onions lol. I still cringe if…

Chicken and Whole Wheat Spaghetti Recipe

This 30 minute one pot healthy pasta recipe is sponsored by Texture. Whole wheat spaghetti is the most cooked type of pasta in my kitchen. For two good reasons. Reason #1 – Costco. It sells the largest most affordable giant box of organic noodles. Reason #2 – kids. They particularly love spaghetti. I don’t think they even know what white pasta tastes like so we have no problem with more nutritious whole wheat. So, on Wednesday was whole wheat spaghetti recipe turn…after lentils, brown rice and quinoa it…

Zucchini Mac and Cheese

On Wednesday, I had a hard time getting off the couch to make this zucchini mac and cheese. But again there was nothing for dinner and I knew this 15 minute dinner had a big chance of being a winner. I love my job but at times I envy office workers typing 8 hours away on the computer. I cherish a few hours a day I get to work on laptop while sipping tea. Majority of my day is spent on feet – getting kids out the door,…

Hearty Minestrone Soup

Hearty minestrone soup recipe back from 2013, which I made while visiting mom’s farm in Alberta and used my son’s red T-shirt as “a napkin” for a photoshoot. Needless to say pictures needed a makeover, however the recipe was tip-top. Clearly on a million acres farm in +10 C summer days there was not much to do except watch TV, cook and drink wine. I still can’t believe I drove 1,100 kms each way with 2 little kids all by myself and gave Alex a 2 weeks vacation. Just like…

Penne with Kalamata Olives, Garlic Roasted Tomatoes and Goat Cheese

Quick 30 minute pasta dinner that I made with a lot of Kalamata olives from a giant jar from Costco, farmer’s market tomatoes and organic soft goat cheese that had to be used up ASAP (leftover from making kale blueberry salad). Then I added fresh garden basil and parsley, grown by me. I also quickly sautéed tomatoes in a new crop of garlic my neighbour gave me, for added flavour. Grape tomatoes would be great too, I just didn’t have any. I don’t wanna say this recipe is awesome because…

Shrimp Orzo Salad

The story behind this shrimp orzo salad is that we ended up in front of a shrimp freezer in Fred Meyer and “3” kids kept chirping in my ear how wonderful it would be to enjoy cold shrimp at the beach. I saw no loopholes with wild caught shrimp but kinda overlooked the fact it wasn’t deveined or thoroughly cooked. Needless to say, we brought it home and I added it to this salad inspired by recent visit to a food co-op. Made with kamut orzo, organic feta cheese, fresh…

Healthy Mushroom Stroganoff

This healthy mushroom stroganoff is a great replacement for traditional Russian beef stroganoff. Made with brown mushrooms, Greek yogurt and brown rice pasta (my favourite for this recipe), this vegetable stroganoff is hearty and healthier than traditional heavy cream version. I was pleasantly surprised to see that even without meat and being full of pasta it has a whopping 20 g of protein per serving. Those mushrooms, pasta and yogurt. I used 2% organic Greek yogurt I found at Costco. I prefer it to 0% because it’s creamier and is…

Clean Eating Alphagetti

If your kids like all this canned pasta in tomato sauce nonsense, they will love this clean eating alphagetti recipe. I never bought a single can of Heinz Alphagetti but I bought organic Trader Joe’s O’s and my kids love it! Not sure why and I’m not even sure is it a soup or a pasta dish?! I have no idea. The whole idea of my lunch or dinner coming from a can sounds disgusting to me. I remember first seeing Alphagetti in kids’ lunch bags at my son’s daycare…

Black Bean Spaghetti with Garlic Shrimp Recipe

Have you ever heard of black bean spaghetti? I first discovered black bean pasta at Costco a year ago. Organic and gluten free, they contain 25 g of protein and 12 g of fiber per serving. Another lighter alternative to pasta besides zucchini noodles with chicken. The taste is very good, the texture is light and cooking time is 7 minutes. The texture and taste is of course different from wheat pasta but very satisfying. Nothing weird like those tofu shirataki noodles.

Turkey Meatball Soup

Recipe and photo makeover day. I posted this turkey meatballs soup a while back, but since then a Martha Stewart part of me grew up. My absolutely favourite part of this turkey meatball vegetable soup is leftovers. I usually double the recipe and we eat it for a few days. Usually twice on the day I make it. Kids love this healthy turkey soup and my son has some right away after school and later on for dinner. This soup is also super lean, healthy and super-super easy to make. You will…
