The story behind this shrimp orzo salad is that we ended up in front of a shrimp freezer in Fred Meyer and “3” kids kept chirping in my ear how wonderful it would be to enjoy cold shrimp at the beach. This healthy mushroom stroganoff is a great replacement for traditional Russian beef stroganoff. Made with brown mushrooms, Greek yogurt and brown rice pasta (my favourite for this recipe), this vegetable stroganoff is hearty and healthier than traditional heavy cream version. Clean Eating Garlic Shrimp with Black Bean Noodles

Have you ever heard of black bean noodles? I first discovered them a year ago at Costco. Organic and gluten free, they contain 25 g of protein and 12 g of fiber per serving. Another lighter alternative to pasta besides zucchini noodles. The taste is very good, the texture is light and cooking time is 7 minutes. The texture and taste is of course different from wheat pasta but very satisfying. Nothing weird like those tofu shirataki noodles.

Healthy Pasta with Pesto, Tomato and Broccoli

Organic pasta mixed with blistered grape tomatoes, broccoli, sun dried tomatoes, all natural pesto and topped with freshly grated Parmesan cheese. Total time = 30 minutes, including the prep and clean up. This was delicious and healthy pasta! A few years ago, my kids couldn’t stand pesto. So, I stopped buying it and never made one. Whole grain pasta, fresh kale (or spinach), extra lean ground turkey topped with a reasonable amount of part skim mozzarella cheese and baked until golden.
