Ingredients for Cottage Cheese Chocolate Pudding

You’ll need 5 simple, wholesome ingredients to make this cottage cheese chocolate pudding recipe.

Cottage cheese, peanut butter, cacao powder, maple syrup, milk.
  • Cottage cheese: Feel free to use any fat variation you prefer, I typically have 2% in my fridge.
  • Milk: I used oat milk, any milk of choice will work.
  • Maple syrup: The caramel undertones add a rich depth to chocolate recipes but you can swap it out for honey.
  • Peanut butter: Practically made for breakfast! Unsalted peanut butter brings creaminess and a nutty flavor. Almond butter works well too.
  • Cacao powder: Adds a rich chocolate flavor to the cottage cheese protein pudding. Cocoa powder has a milder chocolate taste that can also work well, it’s just a bit more processed and lower in nutrients.

Tips for Best Results

With simple ingredients, easy steps, and some handy tips, you’re all set for the tastiest high protein cottage cheese pudding!

  • Don’t use food processor: Use a high speed blender for that perfect blend, or if needed, go for an immersion blender. Using a food processor will result in a gritty texture and less creamy pudding.
  • Blend well: Ensure everything breaks down smoothly, leaving you with a creamy mixture. After all, no one likes finding clumps in their pudding.
  • Don’t cut recipe in half: Your blender will have a hard time processing the small amount of ingredients.
  • Make it more sweet: I originally made this pudding with 1/4 cup maple syrup and it tastes like the most indulgent dessert ever! Just try to keep sugar in check for breakfast and snack.

Variations and Toppings

Now that you’re hooked on this chocolate cottage cheese pudding, let me share some playful twists, add-ins, and topping suggestions for you to try!

  • Peppermint: Add a dash of peppermint extract for a mint chocolate chip ice cream vibe.
  • Banana: Chocolate and banana, a classic combo! Toss in 1 banana, and keep in mind, the riper it is, the sweeter it gets. If it’s a frozen banana, then add a tiny splash of milk too.
  • Add more protein: Gradually add up to 1 scoop of your favorite whey protein powder, any flavor. You can add plant-based protein powder as well but you will also have to add more milk.
  • Coffee: Dissolve 1-2 teaspoons of instant coffee in a small amount of hot water then add to the blender, you’ll end up with a delicious mocha taste.
  • Vanilla: Add a touch of warmth with vanilla extract.
  • Fresh berries: Top your pudding with strawberries, raspberries, or blueberries for a burst of fruity freshness.
  • Chopped nuts: Sprinkle a handful of almonds, peanuts, walnuts, or pecans for added crunch.
  • Shredded coconut: Go tropical by adding shredded coconut, this adds a sweet and chewy texture.
  • Granola: Add a hint of wholesome grains by layering your pudding with granola.
  • Whipped cream: Take your indulgence up a notch with a dollop of whipped cream.
  • More chocolate: Top with chocolate chips or chocolate shavings for presentation and an extra layer of chocolate.

How to Store

Store: Transfer to airtight containers and store in the fridge for up to 5 days.

Meal prep: Divide into individual portions and kickstart your day with a protein-packed breakfast, enjoy a midday snack or a healthy treat.

Freeze: I don’t recommend freezing it because the water content in cottage cheese can make it turn icy.

FAQs

Does it taste like cottage cheese?

Nope, no salty taste here. It’s more like a mousse. Even if you hate cottage cheese you will like this pudding. It tastes like the most indulgent chocolate peanut butter treat.

What is the best cottage cheese to use?

You can use full-fat cottage cheese, low fat cottage cheese, or fat free cottage cheese for this recipe. I just recommend to buy lower in sodium cottage cheese, so you don’t taste it here.

Can I replace cottage cheese with something else?

Replacing cottage cheese with Greek yogurt may work, but you will have to chill the pudding for a few hours to thicken up. Or just make my Greek yogurt chocolate pudding or hard boiled egg chocolate pudding.

Can I make a single serving?

No, I don’t recommend to cut the recipe in half because your blender will have a hard time processing the limited ingredients. Unless maybe it will work with an immersion blender. Silver lining is you can store it in the fridge for up to 5 days.

    1. Hi Lucy. You can use tahini or sunflower seed butter. I bet cream cheese will work too. Or one small ripe banana. Anything thick and creamy. Hope this helps and enjoy!
