These whole wheat apple muffins are made with no sugar, rather naturally sweetened with dates, contain generous amount of apples, Fall spices and heavenly cinnamon sugar topping in every bite. Super moist, fluffy and light. Nobody would ever guess these whole wheat apple muffins are healthy!

I made four batches of these easy healthy apple muffins in the last two weeks just to make sure the recipe works with both spelt and whole wheat flours. I have a huge bag of sprouted spelt flour I got from Costco and it makes delicate and fluffy baked goods. Almost like all-purpose flour => life changing. Since then I tested it in whole wheat pumpkin muffins, carrot oatmeal muffins and healthy oat bran muffins.

Then I ran to the store and got some whole wheat flour to see if 100% whole wheat baked goods can be any good. In the past, I always mixed white and whole wheat flours but not from now on. These whole wheat muffins were spectacular!

I give big credit to a whole cup of my unsweetened organic applesauce. I say mine because I have this 6 feet tall apple tree in my 200 square feet backyard that produces tens of lbs of apples every year. By now, I seriously think I cooked a bathtub of applesauce and froze it in Ziploc sandwich bags. I do the same with beans too => how to cook dried beans.

To incorporate dates, you need to process them in a powerful blender or food processor along with all wet ingredients. Then gently mix with dry ingredients just enough to combine. No need to sift whole wheat flour.

Cinnamon sugar topping is optional but you want it, especially for kids’ lunch boxes. You can use coconut palm or brown sugar.

While baking these healthy apple muffins with applesauce my house smelled heavenly. I skipped lighting up my Bath & Body Works candle that day. Enjoy!:)

Ingredients

Directions

  1. Preheat oven to 350 degrees F and spray non-stick 12 muffin tin with cooking spray. Set aside.
  2. In a food processor or a powerful blender, add Wet Ingredients and process until smooth. Mainly look for all dates to be processed. Set aside.
  3. In a small mixing bowl, add Cinnamon Sugar Topping ingredients and mix. Set aside.
  4. In a large mixing bowl, whisk to combine Dry Ingredients. Add Wet Ingredients from the blender into the bowl and gently mix just enough to combine. Do not over mix otherwise muffins won't rise properly. Add chopped apples and give a few gentle stirs.
  5. Fill each tin 3/4 full with batter, sprinkle with Cinnamon Sugar Topping (I left some for sprinkling after baking) and bake for 25 minutes or until a toothpick inserted in the centre comes out clean. Let muffins cool for about 30 minutes and transfer to a cooling rack to cool off completely.
  6. Storage Instructions: Refrigerate in an airtight container for up to 1 week or freeze for up to 3 months.

    I’ve been sweetening a lot of things solely with dates lately too. Such a magical little fruit. These muffins look comforting. I can smell them through the screen! I have applesauce on the stove today- love the smell! Reminds me of being a kid- my mom always made homemade applesauce.

    Such a simple recipe and I can’t wait to try it. I love dates, but don’t remember ever using them in baked goods. I’m pretty curious to try these all wheat flour muffins (until now I’ve always mixed whole wheat with white,because I’ve seen suggestions to do so in many other recipes). They look amazing!

      Yeah, I have been following that recommendation until I bought spelt flour. Then the light went off and I think I will be baking only with whole wheat flour now. I mean quick breads for sure. And with applesauce. I think baking soda really activates it therefore such a fluffy result.

    Just made these last night with a few minor adjustments and LOVED them! We veganized them by using flax eggs rather than the real eggs, the earthy elements in the base recipe worked very well with the flax eggs. We also cut the dates from 8 down to 2 and skipped the topping completely. It came out more than sweet enough for my crowd with those reductions.

    i read this $%^& recipe at least 5 times and NOWHERE did I find a direction as to when to add the apple. All that nattering about the author’s thoughts did not make up for a poorly executed set of directions

      Hi El. Your snarky vulgar comment was unnecessary. Yes I missed the apples in steps. You add it to a wet batter at the very end. If you paid closer attention to a photo you could have figured out this easy typo. Or even used common sense. I will fix it. Thank you for letting me know.
      It is very easy to spell shit and use caps on the other side of the screen but takes way more knowledge to create a recipe and a blog. Food for thought for you before your next comment on any blog. However, once an asshole – forever an asshole. Sigh.

    I was looking for a date- and fruit-sweetened muffin recipe for my 8 month old daughter, and I’m so happy with the way these turned out. I substituted half of the whole wheat flour with spelt, and they were wonderful. Subtly sweet, wholesome and she just loves them (I also think they’re delicious!) Thank you so much for this recipe–it will definitely remain in our repertoire!

      Everything is eye balled.:) Apples are cleaned, cored, seeded and cut into big chunks. I do not peel them. Add to a large pot and add just enough water to cover. Bring to a boil and cook until soft on low heat. All you have to do is cook apples soft. Puree with immersion blender. Cool and pack into sandwich bags, freeze. That’s it. I will post detailed process recipe in a few weeks.
