Strawberry bark went viral on Instagram, especially the strawberry peanut butter chocolate bark. Since I’m not a fan of the strawberry and nut butter combination I made strawberry yogurt bark instead.

It came out not overly sweet, like biting into a chocolate covered strawberry with a tangy twist, so good!

This viral strawberry bark hits the sweet spot with only 4 simple ingredients.

  • Strawberries: Be sure to use ripe and sweet strawberries, the fragrant ones tell you they are ripe. You’ll need about 1 pound, hulled and sliced.
  • Yogurt: Use 2% or higher fat plain Greek yogurt for a creamier, less icy bark. Any fat percentage works, even 1% or 0% fat, but results might be less creamy and a bit icier.
  • Chocolate chips: I melted dark chocolate chips for a rich flavor, feel free to switch them out with semi-sweet or milk chocolate chips.
  • Coconut oil: We use a small amount of coconut oil to thin the chocolate coating.

How to Make Strawberry Bark

Strawberry bark is easy to make in 4 simple steps, just layer everything on a baking sheet and let it chill in the freezer.

Step by step process how to make viral strawberry chocolate bark.
  • Arrange strawberries: Cover large baking sheet or cutting board with parchment paper. Position strawberry slices in a rectangle, making sure they are touching.
  • Add yogurt layer: Use a mini spatula to spread a single layer of Greek yogurt over the strawberries.
  • Add chocolate layer: Combine chocolate chips and coconut oil in a small pot or bowl, then warm up on the stove or microwave until melted, stirring often. Drizzle the melted chocolate on top of the bark using your small spatula, and gently spread to coat.
  • Let it chill: Place the baking sheet in the freezer and let it freeze for 2-3 hours. Afterwards, cut or break it into pieces and enjoy!

Tips for Best Results

Here are some tips that have kept this strawberry bark at the top of both my healthy snack recipes and healthy dessert recipes.

  • Cut strawberries in even slices: Evenly sliced strawberries ensure a smooth and even spread of both the yogurt and chocolate layers.
  • Hulling and slicing strawberries: Cut off the white, less sweet parts and avoid using the uneven ends. Enjoy snacking on them while you work.
  • Arrange berries tight: Make sure the strawberry slices are touching so everything sticks together when it freezes.
  • Surface to freeze bark on: You’ll need a flat surface for your bark to chill on. I typically use my baking sheet but you can also use a cutting board, charcuterie board, or any smooth, level surface.
  • Use parchment paper: A silicone baking mat or an unlined baking sheet might pick up flavors from previously cooked savory dishes, so always line your sheet with parchment paper.
  • Don’t use regular yogurt: It’s too runny for frozen yogurt bark because it has a higher water content.
  • Don’t skip coconut oil: The chocolate will be too thick to drizzle and harder to spread evenly without it.

Variations and Toppings Ideas

  • Flavored yogurt: Vanilla or honey-flavored Greek yogurt would complement the sweetness of the strawberries and chocolate. Keep in mind they will have a higher sugar content.
  • Nut or seed butter: I’m not a fan of the strawberries and peanut butter combo but you can use peanut butter, almond butter, cashew butter, or seed butter for a dairy-free option.
  • Dairy-free: If you want to stick with the yogurt but go dairy-free, use your favorite dairy-free Greek yogurt.
  • Nuts on top: Give slivered, sliced, or chopped almonds a quick toast in a skillet, then sprinkle on top before freezing.
  • Sugar free: Simply swap regular chocolate chips for Lily’s sugar free chocolate chips.
  • Other chocolate: Choose from white chocolate, milk chocolate, semi-sweet, or dark chocolate. You can also spread half of the bark with one flavor and the other half with a different flavor, or swirl them together for a marble topping.
  • Other topping ideas: The sky is the limit! Add flaky sea salt, granola, shredded coconut, dried fruit, crushed graham crackers, pretzels, or sprinkles.

How to Store

Freeze: Transfer bark pieces to an airtight container and freeze for up to 3 months. Let it thaw for 1-2 minutes before enjoying, so it softens a bit and isn’t too hard to bite.

Don’t store strawberry yogurt bark in the fridge and don’t leave it at room temperature for too long or it will melt.
