When I hear buffalo chicken, I immediately think of buffalo wings and Frank’s Red Hot sauce. Then celery and carrots come to mind. So, imagine all of that cooked in a slow cooker and making the yummiest Crockpot Buffalo Chicken Chili. I think, we all have to thank Rachel Ray for inventing this crockpot chicken chili. It’s all over the net. But I made my own version – clean and simple. As I always do, when trying to recreate the recipe. I just look at the ingredients list…

I make pasta at least once a week. Kids love it and it’s easy. Healthy pasta recipes are quick, budget friendly and believe it or not can be healthy. This Skillet Greek Sausage Corkscrew Toss is no exception. Organic whole wheat pasta, tossed in light creamy sauce with all natural chicken sausage and fragrant bell peppers, sprinkled with fresh feta cheese and parsley. Dried oregano takes this dish to a new you, Greek Goddess, level!

Last night was a hot tub, wine and staring at the stars kind of night. Last night was here-is-your-child-daddy, as soon as Alex walked in the door kind of night. It was time to shut off, for me. I honestly had no idea 2nd kid makes a difference in life. LOL, he did! Fitness, healthy eating a.k.a cheeseburger quinoa casserole, and those nights like yesterday keep me sane, while I’m fully enjoying the ride on a roller coaster of the sweetest years with my kids. Really?! These are…

OMG, guys, I have a new favourite Sunday dinner! These soft pillows aka chicken lasagna roll ups made out of healthy brown rice pasta and filled with clean creamy chicken, artichoke and spinach filling. Topped with cheese and tomato sauce and baked. And if you would like to skip pasta but enjoy the taste of lasagna, try my zucchini lasagna or stovetop zucchini noodles. And for slow cooking, I can’t recommend roasted red pepper lasagna enough. No crazy Alex stories today as this dish doesn’t involve fish. In Vancouver salmon…

I have a nice problem to have – I’m buried in frozen salmon up to my ears. (Very!) Hypothetically speaking, if me and Alex ever would get divorced, it would be over his fishing or driving. Love him to bits.:) This peanut butter salmon was special for a special occasion. Alex caught it during our last trip to Tofino, while Olena was babysitting…again. But I didn’t complain much. 1. We don’t buy farmed fish. 2. This kind and size of salmon would cost $70 at the fish market, $120…

Today is super awesome Thai turkey meatballs day. They are full of your favourite Thai flavours like curry paste, fish sauce, ginger, basil, green onions and coconut milk. Both, the sauce and the meat. Meatballs don’t have to be smothered in tomato sauce (slow cooker porcupine meatballs), nor do they have to be simmered for hours (meatless meatballs). They can have your favourite Thai flavours, be cooked in a skillet, within 30 – 40 minutes. Healthy dinner can be ready that fast. Meatballs do not have to contain eggs, bread…

Pasta e Fagioli means beans and pasta –  slow cooker pasta e ravioli soup with kale in my world. And I can’t believe I have only 6 soup recipes on my blog so far. Whaaaaaat?! I grew up on soups and I cook them quite often: buckwheat soup, Ukrainian borscht, slow cooker chicken noodle soup. Soups are fast, cheap and a great way to use any leftovers. You know that half tomato, yesterday’s sausage and 2 days old pasta?! Instead of a garbage can, they go into Olena’s…

OMG, guys, this slow cooker pumpkin stew is phenomenal! Although it might be hard to tell what’s in my pumpkin stew, even if you stare at it for 20 minutes, it is awesome. Sweet, savoury and cozy pumpkin stew with chicken, quinoa, sweet potatoes and artichokes. So perfect for cool days that are not so cool, just like the quinoa stew,  ground turkey stew and healthy pumpkin soup are. And drumroll, soccer and fit moms…It is cooking itself in your slow cooker and requires no pre-cooking. You don’t even need to mess…

How was your long weekend? Mine was extremely busy with painting our house’s trim, entertaining and kids. But it was great and the weather helped.:) Amongst all the cooking I got done during the weekend, was this fragrant, creamy and cheesy Crock Pot Chicken Chili Con Queso – a hybrid of chicken chili and famous Tex Mex cheesy dip known as Chile Con Queso. Just to make sure we are on the same page, this recipe is not a dip. But rather an easy and clean main course…
