Being from Ukraine, I ate a lot of cabbage rolls in my life. My grandma used to make the best cabbage rolls and they were simple. Over the years in Canada, I have tasted some store-bought and deli made cabbage rolls. They were small, full of rice and bacon and made with sour cabbage. For me, a cabbage roll is the size that you can eat only 2 or 3, meaty and juicy. You mash it in your plate, make a big unappetizing looking mess with sour cream on…

If you have never been to Tofino, you should go!It is located on the west side of Vancouver Island, British Columbia. A surfing capital of Canada, a cold one though.:) Tofino is a small town, known for the Long Beach, surfing, fishing and whale watching. Very different! The only way to get there is by ferry from Vancouver. And then a 3 hour windy road and a gorgeous drive. Total = 7 hours. Not close, so go for at least 3-4 days. If it’s your first time here,…

I got it all figured out for you, guys, when it comes to corn tortillas in this light and summery crustless zucchini pie (also try my crustless zucchini quiche with a tiny bit of spelt or whole wheat flour). Ready?! Nutritional facts of corn tortillas are similar to whole wheat tortillas. Shocking? I know! I’ve been missing out on these guys for the last 13 years. In a comparison based on calories, fat and ingredients list of whole wheat tortilla vs. corn, corn wins. Even a shorter list…

Juicy and fragrant, the best way to describe this lean and clean zucchini turkey burger made with 93% lean ground turkey, fresh cilantro, fragrant cumin and topped with Greek yogurt cilantro aioli. Only 206 calories and 5 WW Points+ per burger! After kids, I think food is the 2nd most beautiful thing in the world besides the world itself.

I made this Mango Black Bean Salad last year, when I started this blog. But old pictures didn’t serve this salad its justice. So, I’m bringing back life to an “old” recipe as hot summer days are perfect for making this plant-based salad. Rich in protein, complex carbohydrates, healthy fats and fiber this Clean Mango Black Bean Salad will keep you satisfied for hours. Just like this Mexican Bean Salad Recipe, Creamy Mexican Kale Salad or Chickpea Avocado Salad. And guess what, it’s so juicy I even skipped the olive oil….

I live in a blueberry country, so we eat a lot of blueberries. New studies show that freezing doesn’t damage their delicate anthocyanin antioxidants, so I freeze blueberries in vacuum sealed Ziploc bags. In winter we just eat them plain frozen, in summer fresh, by a handful or in salads – blueberry quinoa salad or kale blueberry salad. Blueberries are awesome and are considered a superfood! Full of antioxidants more than any other fresh fruit. They boost up your immune system and prevent infections. Blueberries keep you young, prevent…

Can’t believe it’s August 1 already?! On a good note, it means zucchinis are in full bloom and are available super cheap at your local market. A couple of nights ago we stopped at a local fruit & veggie stand and I grabbed 5 lbs of these imperfectly perfect zucchinis. $1 per 1 lb. Love local non-GMO food! I’m a fan of Eggplant Parmigiana, but love zucchini so much more (hi, Parmesan zucchini sticks). A couple minutes of thinking and Light Zucchini Parmigiana Recipe was born – layers of…

To me, an obvious healthy food enthusiast, there is nothing better than making a healthy dinner with fresh vegetables and herbs on a summer day. And this black bean quinoa casserole is perfect for that. Its flavours scream summer: black beans, corn, bell peppers, cilantro, scallions and coconut milk. A hybrid of modern Mexican and Thai cuisines. Makes a perfect easy, healthy, vegetarian and gluten free dinner!

Easy and healthy grilled chicken recipe, just in time for grilling season and hot weather. Meaty chicken thighs marinated in sweet zesty marinade of coconut milk, lime juice and fresh cilantro. Jalapeno pepper adds a tiny spicy kick to the chicken that is still kid friendly. Feel free to add more jalapenos for a spicier version. This coconut cilantro chicken recipe is so easy, you can marinate the chicken the day before and grill it on a weeknight after work.

Last month I went on a vacation to all inclusive resort in Mexico for a week. I worked out every day, ate healthy, soaked up lots of sun and came home skinny and happy. Not only didn’t I gain any weight, I also got a flatter stomach. How? By eating healthy foods and treats in moderation, by working out on a regular basis. I just want to share with you what worked for me and show what you can eat on a vacation without coming home and bringing…
