Healthy Poppy Seed Dressing

As soon as I whisked Greek yogurt with honey for this healthy poppy seed dressing recipe, and did a first taste test, it reminded me exactly of a bottled version I stopped buying years and years ago. Creamy, light, sweet, with a hint of onion and a sea of poppy seeds. There is not much more to say about this dressing except you gotta make it and pour over some organic vegetables, fruits and nuts of your choice => kale blueberry salad. Healthy Vanilla Cupcakes

These healthy vanilla cupcakes came out perfect! Because Easter is around the corner, we decorated them with unsulphured and unsweetened organic coconut flakes (fancy grade) for “feathers” and organic naturally coloured jelly beans for “eggs”. Kids were ecstatic as I never made cupcakes before!:) I’m not a huge cake person and neither are my kids. They dislike the overly sweet icing but they sure love the cuteness of cupcakes. So, they were all over these cupcakes because they were up to their taste – low in sugar and healthy…

Creamy Kale Salad

I have deep love and respect for kale! We eat it pretty much every day, in a form of sweet kale salad recipe or lemony kale pasta (including kids – a 4 year old tolerates it only in smoothies but I will take it for now). Ever since we got a serious health condition in our immediate family (I might be able OK to talk about it one day), my love for kale has deepened even more! Kale is a powerful remedy against cancer: In addition to providing a truckload of vitamins and…

Clean Eating Cheesecake Bars with Cranberries

One of the readers left a comment on Healthy Strawberry Cheesecake Bars saying she made them with Greek yogurt and cottage cheese instead of cream cheese. I was intrigued right away because it sounded healthier. I was raised on rich homemade cottage cheese that resembles American farmer’s cheese. My mom and grandma would make it by boiling buttermilk, then draining in a cheesecloth hanging on a tap overnight. The result was dry, pressed and crumbly cottage cheese that we would eat with freshly made sour cream from a farmer’s…

Chicken Alfredo Spaghetti Squash Boats

Spaghetti squash boats with chicken in creamy Alfredo sauce is comfort food made lighter by replacing traditional pasta with tender spaghetti squash and heavy cream with not less creamy but so much healthier Greek yogurt. Without sacrificing the flavour of course – garlic and freshly grated Parmesan cheese add so much flavour to the sauce. I haven’t had Alfredo sauce for years. My blogger friend Alex from Canuck Cuisine once mentioned to add cornstarch to Greek yogurt to prevent it from curdling. We were talking about my Crock…

Healthy Strawberry Cheesecake Bars

Oh my goodness. As my brain is melting and hands are shaking, nearing the 30 Clean Quick Dinner Recipes eBook publication date this Sunday, I really wasn’t going to post any recipe until Sunday. Simply just because I haven’t taken pictures of any recipes in the last 10 days. Has it been that long?! Whooooaaaa. I had wonderful Alex at home cooking for us. Yes, he is that good and all mine.:) But then I felt wrong and guilty for teasing you with my skinny cheesecake photos on…

Healthy Homemade Ranch Dressing

Healthy homemade ranch dressing recipe with all the bells and whistles of a store-bought version. Salty and perfectly tangy buttermilk, combined with Greek yogurt and fresh dill. Oh, and those tiny pieces of freshly ground black pepper are a must! Perfect to serve over any mixed veggies and greens salad (like healthy chef salad), as a dip for chicken wings or your next vegetable tray. Being a true North American discovery, many years ago in Hidden Valley, this salad dressing is very close to me. Growing up in Ukraine, we…

Healthy Oatmeal Scones

Healthy oatmeal scones made with 3 times less butter and sugar than traditional recipe. White flour makes only 1/3 of the dough, substituted by steel cut oats and whole wheat flour. To make the scones moist I used Greek yogurt. Perfect Back to School snack. Confession: I have never made scones before but I’ve been buying steel cut oats from Costco for over a year. On a box, there is a blueberry scone recipe with 2/3 cup butter and 1/2 cup sugar. But I was intrigued with steel cut…

Whole Wheat Strawberry Banana Protein Muffins

I have no idea why I have been putting off baking these yellow bundles of joy bursting with fresh strawberries?! Made with only whole wheat flour, protein powder and no added sugar, you get a strawberry flavour with every muffin’s bite. I know why. If you are a baker you know how hard it is to get goods made with only whole wheat flour to rise. And secondly, whey protein could make muffins dry and rubbery. OK, you know how Lululemon bags say “Face one fear a day”?!…
