I had a hard time naming this salad because so much is going on here. We got juicy shrimp, creamy avocado, sweet grape tomatoes, crunchy bell peppers and cucumbers, fresh cilantro all dressed in a scrumptious garlicky and tangy Greek yogurt dressing. Fresh, creamy and so summery. I want summer to be here now! 2 months to go. Sigh.

I can feel summer is almost here – we put our tent trailer for sale. Yep, I lasted one season. I decided to be a big girl, once again, and not to pretend I enjoy camping. What do you mean you don’t like camping?! Well, I hate it, honey.

I hated everything about it: from pre-booking our summer for up to 3 – 6 months in advance to packing the whole house including pillows, spinach and Tylenol container of a laundry detergent. I hated sand and gravel in our beds, bathroom trips at 5AM and manual drip coffee in a plastic mug. More than that I hated coming home and unpacking and cleaning everything. OMG, never again.

Camping is fun but I just grew out of it. I will do tent camping with kids in our backyard or nearby park for one night. Count the stars, roast marshmallows and sit by the fire. But don’t ask for more. I’ll take them on a road trip along the West Coast, go for a morning run, sip on Starbucks, take hot shower and off we go for a day full of fun – breakfast, parks, lunch, swimming, sightseeing and dinner. But no more camping in a trailer.

I’m more of a chilled creamy shrimp salad with a cold glass of Chardonnay on a beach patio kinda gal now. And don’t judge me. I hate to be judged.:)

This shrimp salad is more than just fantastic. It’s creamy without any mayo. I kissed good bye to mayo salads long time ago. I don’t mind a few tablespoons of organic mayo once in 6 months but not more than that. And you won’t miss it in this scrumptious salad – Greek yogurt combined with avocado and apple cider vinegar make this salad sexy tangy and creamy.

I used medium size pre-cooked shrimp from Costco. I have no idea if it’s wild or sustainably raised/caught and don’t wanna know. Shrimp falls into 20% of the 80/20 rule for me. Again, don’t judge me. I spend fair amount of my life hunting organic meat, dairy and produce. I just can’t look for organic shrimp at this time. And we don’t eat it that often anyways. Any size shrimp would work.

You can serve this shrimp salad with extra greens like butter lettuce. Gives the salad a nice crunch and extra nutrition. Enjoy!

Greek Yogurt Shrimp, Avocado and Tomato Salad

Ingredients

  • 1 lb cooked frozen shrimp or 12 oz thawed & drained, cut in halves
  • 1 cup grape tomatoes, sliced in halves
  • 2 medium bell peppers, coarsely chopped
  • 2 medium avocados, cubed
  • 1/2 long English cucumber, cubed
  • 1/2 cup cilantro, chopped
  • Greek Yogurt Dressing:
  • 1/2 cup Greek yogurt
  • 2 tsp apple cider vinegar
  • 1 tiny garlic clove
  • 1/3 tsp salt
  • 1/2 tsp black pepper

Directions

  1. Add Greek Yogurt Dressing ingredients to a small food processor or Magic Bullet and process until smooth. Set aside for flavours "to marry" each other.
  2. In the meanwhile, prep your veggies and add them to a large bowl. Pour dressing over and mix gently to combine. Serve chilled.
  3. Storage Instructions: Refrigerate covered for up to 2 days (dressed is OK).

    I hate gravel in my bed and dirty feet. But we found a camp ground that looks better than 3 star hotel, actually enjoyed camping for the first time last year 🙂

      I’ll go to that campground, once a year, with my tent, for 1 night, but no trailer in my life anymore! The problem was the freaking trailer, not the campground. 😀 We camped 6 times last year. I thought I would die from packing and cleaning. Trailer is just not my thing, I guess.

      Camping is fun. I guess in small amount and at different stages of life. NOT with 2 little kids on a regular basis. And no cleaning the trailer. I had a dream last night – all of us in a truck, pulling trailer, kids in the back with pillows and me holding a box of spinach. Living a dream LOL.

    Oooh! This looks really tasty! I think I’ll need to try this recipe out before I change my diet to a plant-based diet. I’m pescetarian right now but am transitioning slowly… 🙂

      Oh my, you are brave! I recently came to a conclusion I could never be a vegetarian, not to mention vegan. Although I have vegetarian days.

      Absolutely fine. There might be some juices at the bottom which you can drain. I keep this salad in a fridge for a few days.
