Chef salad has been one of my favourite North American recipes ever since I landed on this prosperous land. Seriously, if you still don’t know, we got it all and way more. Trust me on this one.
LIfe is crazy! My house is loud, gets messy (I’m a clean freak and paying for it) and there are always bazillion things on the schedule. By Thursday, I’m usually ready for a hot tub and wine but this week I did something different. I got back to working out regularly, early in the morning and no wine till Friday.
I don’t know how you feel about wine but I love it! In moderation, of course. We drink every weekend though. When I was younger (it sounds funny cause in the eyes of 40 year olds, I’m still young), I drank way more. And I also smoked. Can you believe it? Me smoking?! I quit about 2.5 years ago thanks to Chalene Johnson and her amazing workouts that I still think are the best!!!
So, that was back then. Now, after a glass or two of wine, I feel like I’ve been partying all night. You know why? I blame it all on fitness. As long as I work out regularly, my body detects alcohol as poison and rejects it. I’m baking more now. In fact, I have something sweet coming next week. With skinny cream cheese frosting on top.:)
So, why the heck am I telling you this?! Because I want you to be inspired trying something new in your life. Today, on Monday, in the New Year. It’s cool to have healthy and happy goals.:)
Like this healthy Chef Salad recipe. I decided it was time to feed Alex some other greens besides superfood green smoothies. No, no, no, he never complained. But Alex never ever complains. He can’t cook, so he can’t complain. Just try it, honey. Just try. I know, you are secretly reading this on your lunch break.;)
First, I whipped up this Skinny Buttermilk Ranch Dressing. I don’t know what you smothered with it since it’s already been 2 days since I posted it. But me…I was sticking my finger in the jar and licking it. I know! It was super good! Even my mom left a comment saying she went to make it. I highly doubt that because #1.she is not a recipe girl and #2. her loyalty to MSG bottles of ranch will die with her. God bless her soul and many many more years to her!
Then, I boiled some eggs which I haven’t done for years. As a kid, we used to eat them a lot since there was no cereal, yoghurt or bagels for breakfast. I love cold hard boiled eggs! And then chicken…I buy and cook chicken breasts in batches of 6. This time, I literally sprinkled chicken breasts with garlic powder and a bit of salt and pan fried for 7 minutes on each side. You could use any cooked chicken. Even rotisserie chicken would work. Remove skin though. It has all the fat and salt.
And then veggies…get creative and use what you have.
Tomorrow is Friday = Funday. I’m going to squeeze in one more workout for the week and then off to a busy weekend. Have to work on another giveaway for you and October Income Report that some of you have been waiting to see.:) Aaaand I’m gonna have some fun: wine, watch XFactor, visit friends, have friends over, sit in a hot tub, play trains, cook (of course), no kids’ soccer, no kids’ Birthday parties. You know, usual stuff. I told you, we’ve got it all.:)
- 1/2 head iceberg lettuce, roughly chopped
- 1/2 English cucumber, halved & sliced
- 2 medium tomatoes, roughly chopped
- 2 eggs, boiled & sliced
- 8 oz cooked chicken breast, roughly chopped
- 1/4 cup any low fat cheese, shredded
- 1 cup Skinny Buttermilk Ranch Dressing
- Toss all ingredients together in a large bowl and top with the dressing. You can also make individual salads or layer ingredients on a large platter.
